Portabella Burger with Sweet Potato Fries

Ingredients:


For the Burgers

  • 4-5 portabella mushrooms

  • 3 Tbsp avocado or olive oil

  • ¼ cup balsamic vinegar

  • 1 tsp sea salt

  • 1 tsp ground black pepper


For the Fries

  • 2-3 medium sized sweet potatoes, scrubbed

  • 3 Tbsp avocado or olive oil

  • 2 Tbsp herbs de provence or rosemary

  • Sea salt & pepper to taste


For the Caramelized Onions

  • 1 Tbsp avocado or olive oil

  • 1 cooking or sweet onion, sliced into strips

  • Pinch of sea salt


For the Toppings

  • 4-5 hamburger buns, sourdough toasts (for open face), or lettuce wraps (for gluten free)

  • Pesto or garlic aioli 

  • 1 cup Spinach

  • Brie, goat, or blue cheese (optional)

  • Bacon from pigs who lived the good life (optional)

  • ⅔ cup cherry tomatoes, halved



Directions:

  1. Preheat the oven to 400℉.

  2. Wash and destem the mushrooms and lay them in a dish large enough for them to be spread across the bottom. Whisk together the rest of the ingredients and pour on top of the mushrooms. Allow them to marinate for at least a half hour.

  3. As long as you give the sweet potatoes a good scrub peeling them is optional. Cut them up into fry like strips and place them on a baking sheet. Combine the rest of the fry ingredients together and then pour over the fries. Mix together with your hands or a flipper then spread them out evenly on the pan (use two pans if they look cramped). Put these into the oven for 20-30 minutes or until they are soft and browning (this time can vary depending on your oven and how thick you cut the fries). Don’t forget to toss them halfway through.

  4. While those are cooking, heat a large fry pan on medium. Add the onions, oil, and salt. Cook for 2-3 minutes or until translucent. Then turn the heat down to med-low saute until light brown, stirring frequently. Add a splash of water if they start to stick.

  5. When the onions are done put them aside in a small bowl and turn the heat up to med-high. Add the portabella burgers and their  juices to the pan and cook until bottom is browning then flip them and cook until tender all the way through. Adding cheese (if using) near the end so that it melts.

  6. Build your burger with the aforementioned ingredients and any others you are feeling. Put it on a plate with some sweet potato fries. Enjoy it to the fullest.
