Delicata Squash Tode in the Hole
Ingredients:

2 delicata squash, washed and scrubbed

Avocado or olive oil

Sea salt and freshly ground pepper

3-4 sprigs fresh thyme

6-8 pieces of local bacon (optional)

6-8 eggs from happy chickens

3 cups arugula or spinach, rinsed and drained

Optional toppings: salsa, hot sauce, avocado, tomato jam, or anything else you’re feelin

Cilantro or parsley for garnish
Directions:

Preheat the oven to 400℉. Line a baking sheet with parchment paper or grease lightly.

Cut the squash width ways into 1 inch rounds. Empty the seeds out (you can clean and roast the seeds later if you’re into that) and place the delicata rounds onto the baking sheet flat side down. Lightly brush the rounds all over with the oil. Sprinkle with salt and pepper and slide them into the oven for 20 minutes or until tender when poked with a fork.

While the squash is in the oven, cook the bacon using your preferred method.

Take the delicata out of the oven and crack an egg into each of the delicata rounds. Sprinkle some fresh thyme on top of each egg and then slide the baking sheet back in the oven for 8-10 minutes or until the eggs are cooked to your preference. There will most likely be some egg spillage out the bottom, this is all good.

Place a handful of greens onto each plate. Put a delicata round on top of the greens along with a strip of bacon. Add your desired toppings and garnish and enjoy :)
