Cordyceps Energy Bars

Cordyceps (Cordyceps sinensis) has been used for millennia in Traditional Chinese Medicine to fortify strength and energize the body. Folklore has it that Himalayan herders discovered cordyceps after noticing the increased strength and stamina their animals had after grazing on wild Cordyceps. (Makes 16 bars) 
Ingredients:
1 ½ Cup Unsweetened Shredded Coconut 
1 Cup Almond or Cashew Butter 
½ Cup Hemp Seeds 
¼ Cup Chia Seeds
1 TBSP Harmonic Arts Cordyceps Mushroom Powder
⅓ Cup Maple Syrup or Raw Honey 
1 TSP Cinnamon
Directions:
  1. Mix all ingredients together in a bowl or food processor until it forms a thick dough. 
  2. Line an 8x8 baking dish with parchment paper. Press the mixture flat into the baking dish. 
  3. Refrigerate for 3 hours, or overnight.
  4. Once set, lift from the plan and divide it into squares. Store in the refrigerator. 
  5. Grab on the go to supercharge your outdoor adventures!
