Christmas Coloured Cauliflower

Ingredients:

  • 1 head of cauliflower

  • Avocado oil

  • 1 bunch parsley, chopped

  • 2 tsp chili flakes

  • ⅓ cup fresh parmesan cheese, shredded (optional)

  • Sea salt & pepper, to taste

  • ¼ cup pomegranate seeds


Directions:

  1. Preheat the oven to 425℉

  2. Prepping: Cut the cauliflower into florets and spread them evenly on a baking sheet. Drizzle them lightly with oil and then sprinkle on the parsley (saving a bit for garnish), chili flakes, cheese, salt, and pepper. Mix them around on the baking dish until everything is evenly coated.

  3. Baking: Bake them in the oven for 25-30 minutes or until the cauliflower is nicely browned. Garnish with parsley.

Enjoying: Best enjoyed alongside a holiday main course when in a festive mood.
