Broccoli Apple Soup
Ingredients:
- 1 head broccoli
- 2 Tbsp avocado oil or butter
- 1 red onion, chopped
- 2 cloves garlic, crushed
- 2 apple, cored and grated
- 2 stalks celery, chopped
- 2 tsp Thyme (fresh or dried)
- 6 cups vegetable stock
- Sea salt & ground black pepper
Optional Garnish:
- Bacon, cooked until crispy
- Sharp cheddar cheese, grated
- Plain Greek yogurt
- Organic table cream
- Nutritional yeast
Directions:
- If using bacon, start cooking it now using your prefered method.
- Put a large pot on the stove on medium heat. While it heats up, cut the head of the broccoli into small florets and chop up the stock of the broccoli, separate them and put them aside. Add the oil, onion, and garlic to the pot. Let it saute for about 2 minutes. Add the broccoli stems, apple, celery, and thyme to the pot and saute for another 2-3 minutes.
- Pour the stock into the pot and turn the heat up to high. Bring it to a boil then simmer on low-medium for about 20 minutes or until the stalks are tender, stirring occasionally. Add the broccoli florets and simmer for another 5 minutes or until the florets are soft.
- Add the soup to a blender and puree until you get your desired consistency. If you like it a bit chunky leave some out and add it back in after blending. Add salt and pepper to taste.
- Pour into bowls and top with your Garnish of choice. Enjoy.
